Half regular spaghetti half protein spaghetti. Earth Balance soy-free vegan butter. Carrot baby food for the sauce. Giorgio sliced mushrooms.

It’s pretty bland (although the mushrooms are amazing omg).

I have A LOT of food sensitivities, am poor, and have limited energy due to my health issues, so I just experiment with random stuff. I know it probably doesn’t seem like much of an experiment but I’ll probably try different things as I go along.

Pray it doesn’t kill me :3

    A dash of MSG would reinforce the glutimates from the mushrooms and is one of the secrets of flavour. The only other thing I might suggest - if you’re okay with black pepper, a little freshly ground would also be a nice touch (you typically don’t want as much freshly ground as pre-ground because the flavour profile is very different and fresh ground is much stronger).

    I don’t have your apparent dietary restrictions/decisions, but I’ve got health/energy issues, so I’ve tried to do a lot of simplifying. For me, any al dente pasta with butter, salt, msg, fresh ground black pepper, butter, and oh, more butter - that’s just a tasty meal.

    I’ve also found that I can make something that reminds me a little bit of chili mac if to the above I add some chili beans - which should keep things on the vegan side since it sounds like you are. I suspect nutritional yeast might be good as I’ve heard it’s a good sub for cheese powder (which I have and add to things).

    I dunno if your meal was shitty food porn or not, but good eats is good eats :)

      I will try that! Thank you for the recommendation! I kept thinking that it would probably work better in a soup and I wonder if I was subconsciously thinking MSG (ramen)

      I think I actually used slightly too much butter with this somehow, but that’s alright, because I was originally worried I hadn’t used enough!

      And ahhhhh chili mac I forgot about that. I just got out of the ER recently partially due to malnutrition because I’d run out of things to eat without having my vision go black from pain. I’d no longer been able to eat anything high fat or oily but I’ve also had to limit things like beans for ages too. I’m on a new med that’s been helping a ton, I need da chili mac, thank you for reminding me. :)

      Am mostly vegetarian but my goal is vegan someday if my body allows it! It’s looking more likely now. I couldn’t even have anything with apples for a while now, even in tiny amounts, cuz I’d get super sick for days. Apple turnovers included in that. I’ve had THREE in the past few days and I’m okay!!!

        And fucking hell, you might be putting up with more shit than I am, and I’m putting up with a lot (seven heart attacks, kidney failure → dialysis, below-knee amputation. On top of diabetes, ADHD, anemia, and other issues lol). Fucks sake, I hope things get better for you. I know how shitty it is with dealing with that sort of crap, but at least most of my problems are energy and dietary restrictions.

        Glad beans were a good reminder. So lovely for low-energy cooking if you have a slow cooker!

      Throwing around MSG with black pepper as though white pepper isn’t already the perfect pairing.

      But for serious, with its earthy flavor, you might find that it compliments the mushrooms a little more. It’s also already husked, so taking out some of that peppery bite helps the other flavors in the dish shine just a little more.

      More to OP’s benefit, the way that white pepper is processed sometimes makes it a better alternative for sensitive tummies.

    Is the alt text for the image produced by AI? Because, it says “there’s a small amount of orange sauce”, but that’s the tablecloth. Using AI to make incorrect descriptions helps no one. Can we not waste resources on this, please?

      There is a small amount of orange sauce on the pasta, it’s made from carrot baby food and is visible on several strands. The tablecloth being orange is a coincidence.
