Not sure if the most important crop ever but at least around here near where it came from is highly important. And it makes me proud my dad devoted all his working life, since he could until he couldn’t, growing potatoes of all sorts. My favorite is what we know around here as “papa criolla”
I just made some Syracuse Salt Potatoes the other day. I used baby golds, but these Papa Criolla potatoes somehow seem even smaller. I’d love to get my hands on some, they look perfect.
